Outdoor Cooking in Giethoorn

It was one of those days that soaks the skin and scatters the hair – not the most idyllic setting for outdoor cooking at Buitenkoken Giethoorn. The wind howled and the rain poured down in buckets. But against all odds, this untamed natural dynamic brought an exciting new dimension to the experience.

Cooking over a wood fire

Upon our arrival for the cooking workshop over a wood fire, we were warmly welcomed with a cup of coffee or tea, of course prepared over a crackling outdoor fire and served in a traditional percolator. We were divided into different groups, and each of us hung on the lips of the instructor René, who patiently explained the finer points of outdoor cooking. The wind had a muffled effect on his voice, but his enthusiasm was unmistakable.

We were introduced to the various cooking materials we would use—the Dutch oven took center stage—and we received a clear demonstration of how to best stoke the fire. Once the instruction was complete, the tasks for our four-course menu were divided among the different groups.

My partner and I had the honor of preparing the chicken stew with white wine. We started by building a solid fire, above which our Dutch oven could hang. It took some effort to get the logs in the right place, but once ignited, the fire burned bright and steady.

Delicious dishes and a cozy atmosphere

The cooking itself was a joyful challenge. We seasoned the chicken, added fresh vegetables, and sautéed everything in the Dutch oven with a splash of olive oil. The sound of sizzling and the aromas wafting up from the pan were enchanting. After deglazing with white wine, we let the stew simmer gently until the chicken was tender and the meat effortlessly slid off the bone.

Meanwhile, the other groups were busy with their own culinary adventures. A mushroom broth was prepared, accompanied by delicious cornbread. Another team created a richly filled lasagna, while yet another prepared a bean dish with specialty beer. Grilled pineapple and bread pudding with almond paste and rum raisins were also made. It was an orchestra of delightful aromas and a visual spectacle of outdoor cooking, with each group playing its own melody.

Once all the dishes were ready, they were laid out on a long table, transforming it into a royal buffet. We indulged in the delicious dishes, enjoyed each course, and savored the results of our hard work.

I must admit, each dish had its own unique charm and flavor, brought together by outdoor cooking. From the tender chicken stew, soaked in the richness of white wine, to the delightfully spicy bean dish, enhanced by the character of specialty beer – every bite was a treat for the taste buds. The grilled pineapple was surprisingly refreshing, while the bread pudding with almond paste and rum raisins was the perfect finale to an extraordinarily delicious feast.

Although the afternoon started wild and rainy, the effect that the weather had on the experience was unexpectedly positive. It enhanced the feeling of community and collaboration, making the cooking an exciting challenge. The wind and rain added a certain robustness to the atmosphere, which harmonized with the smoky flavors of the dishes we were preparing.

After dinner, we ended the day with another cup of coffee, brewed once again over the wood fire. As we sat there, our hands clasped around the warm mugs, satisfied from the delicious food, there was a sense of fulfillment and contentment. Despite the weather, or perhaps because of it, it was an unforgettable experience.
